A Holy and Happy Easter to all our readers.

A reading from the Holy Gospel according to John: On the first day of the week, Mary Magdala came to the tomb early in the morning, while it was still dark, and saw the stone removed from the tomb. So she ran and went to Simon Peter and to the other disciple whom Jesus loved, and told them, “They have taken the Lord from the tomb, and we don’t know where they put him.” So Peter and the other disciple went out and came to the tomb. They both ran but the other disciple ran faster than Peter and arrived at the tomb first. He bent down and saw the burial cloth there but did not go in. When Simon Peter arrived after him, he went into the tomb and saw the burial cloth there, and the cloth that covered his head, not with the burial cloths but rolled up in a separate place. Then the other disciple also went in, the one who arrived at the tomb first, and he saw and believed. For they did not yet understand the scripture that he had to rise from the dead. The Lord has risen from the dead as he said. Let us all rejoice for he reigns for all eternity. Alleluia! Alleluia!

We lived on a farm when I was a little girl, and when it was Easter time my brother Johnny and I hunted for Easter eggs outside. We both came back into the house empty handed. My Dad told us to go and look under the hayrack as he saw the Easter rabbit hopping around by the rack. Out we flew, we saw the Easter eggs but they were all covered with big black ants. We came back into the house, both of us crying. We were afraid of the ants and were afraid to rescue the eggs. Our Dad went out, pail in hand, put the beautifully colored eggs into the pail, and over to the outdoor pump and washed all the ants away (and also most of the colors). We cracked them and enjoyed the insides, minus the ants!

Happy belated birthday to my great-grandson, Tyler Akemann! He’s has become a tall and handsome young man. He looks extra tall standing next to me!

Did you drink enough water today? At least six glasses of it. I was reading in one of my Reader’s Digest how important water is for your whole body. If you drink enough water, your whole body and BRAIN will benefit. Here’s a few more things that will improve: You’ll have more energy; you’ll work up a sweat. Water is a key to physical activity; you may even lose some weight; your memory will improve; your skin will glow; you more easily will kick away cold symptoms; you’ll be in a better mood, and you’ll keep things regular. Drink a glass of water before eating and keep your drinking water in the refrigerator. Now let’s all race to the water fountain and enjoy a nice glass of that H20!

I found the following in one of my Reader’s Digest books. It’s called Points To Remember.

*If you went back and fixed all the mistakes you made, you’d erase yourself.

I think you’ll like the following recipe. You can purchase all of the ingredients at our local Davis’ MarketPlace.

Healthy Chicken Dumpling Soup

One-pound boneless chicken breasts cut into one-inch cubes

3 cans chicken broth

3 cups water

4 carrots chopped

1 medium onion chopped

1 celery rib chopped

1 tsp. minced parsley

½ tsp salt

¼tsp. garlic powder

¼ tsp. poultry seasoning

¼ tsp. pepper

Dumplings: 3 large egg whites; ½ cup cottage cheese; 2 tablespoons water; ¼ tsp. salt; 1 cup flour.

Cook chicken until no longer pink. Add the broth, vegetables and seasoning. Bring to a boil. Reduce heat to simmer uncovered about 30 minutes, or until vegetables are tender. For dumplings, in a large bowl, beat the egg whites and cottage cheese until blended. Add water and salt. Stir in the flour and mix well. Bring soup to a boil and drop the dumplings by tablespoons full into the boiling soup. Reduce heat, cover and simmer for about 15 minutes. Do not lift cover while simmering. Enjoy!
